Our staff are an integral part of our success here at Inverarity Morton and have played a vital role in shaping our legacy in Scotland’s on-trade. As we celebrate 80 years of business in 2025, we’re proud to introduce you to some of the dedicated individuals who help drive our company forward.
29 year old Dillon grew up immersed in the hospitality industry, coming from a family of hospitality professionals. Recently appointed Spirits Activation Manager at Inverarity Morton, Dillon brings a wealth of expertise to this new role. “The Scottish spirits industry is incredible – it’s where craftsmanship, tradition, and creativity come together to produce some of the world’s finest whiskies, gins, and craft spirits. It’s rooted in heritage but constantly changing, and the passion behind it is what drives its global success.” Here at IM, Dillon will focus on driving independent specialist retail, championing Scottish spirits, supporting small Scottish producers, and collaborating with the Inverarity Morton sales team through activations. “I’m excited to be starting work with the company during such an auspicious year. I’m hoping this brand new role will be a satisfying challenge – I want to shape it and make it my own!” An expert mixologist, Dillon is well-versed in the art of crafting exceptional drinks. “I love working in the drinks trade and find it fascinating partly due to the vast range of products available – the industry is just constantly evolving and driven by consumer trends. There are also so many different working practices, from mastering the art of mixology to managing hospitality operations.” Through his ‘In the Mix’ column in our monthly spirits brochure, Dillon will be sharing regular cocktail inspiration, and creative suggestions to elevate your drinks repertoire. “Of course business owners need to think about their drinks’ offerings from a commercially viable perspective – but it’s important to also consider what drink styles are trending, and also what your drinks list looks like from a ‘normal’ customer’s point of view.”
